Ingredients

2 onions roughly chopped
2 carrots roughly chopped
2 celery sticks roughly chopped
20 cloves
4kg unsmoked boneless gammon
8 black peppercorns
2 star anise
1 cinnamon stick
4 bay leaves
500ml stout
200ml cola

For the Glaze-
6 tbsp treacle
4 tbsp wholegrain mustard
2 tbsp light brown sugar
1 tbsp cider vinegar

Because it is delicious to eat on Boxing Day when you have had enough turkey!

How to make Boxing Day Ham

Scatter the vegetables in a stock pot and lay the gammon on top. Pour in the liquid and simmer for 2 hours. Leave the gammon to cool in the stock. When cold, mix together the glaze ingredients in a bowl. Carefully remove the layer of fat on top of the ham with a sharp knife- you need an adult here as its tricky. Then make a criss- cross pattern with the knife. Pour half the glaze over the top then cook in an oven at 180 degrees c. Keep spooning over the rest of the glaze at intervals. Cook for 25 mins. Deelish!!
