Ingredients

1 tbsp. vegetable oil
1 onion roughly chopped
1 tsp ground coriander
1 medium/large potato, peeled and roughly chopped
4 large carrots peeled and roughly chopped into small pieces
2 vegetable or chicken stock cubes or similar
1 litre of cold water
1/2 packet fresh coriander (large handful)

Why did Kenny make this dish?

I made this dish because I love soup and I decided that I would try and make it myself.

How to make Carrot & Coriander Soup

1) Gently heat the oil in a large pan with the onion and cook for 5 minutes.
2) Stir in the ground coriander, potato and carrots.
3) Add the stock cubes and water and bring to the boil.
4) Reduce the heat and cook for about 20 minutes until the carrots are soft.
5) Tip into food processor with the coriander then blitz until smooth (you may need to do this in small batches). Return to pan, taste, add salt if necessary, then reheat to serve.
