Ingredients

1 onion
2 potatoes
700g carrots
750ml veg stock
2tbsp oil
small bunch coriander
salt & pepper to taste

Why did Kenny make this dish?

I made this dish because it is one of my favourites.

How to make Carrot & Corriander Soup

Chop onion and fry in the oil until soft.
Chop potatoes and carrots and add to pan. Cook with lid on for about 10 minutes.
Add stock and simmer with lid on until vegetables are soft.
Add coriander and blend with a stick blender until the desired thickness is achieved.
season to taste with salt and pepper.
Serve with warm crusty bread.
