Ingredients

2 potatoes peeled and chopped
3 leeks, outer leaves removed, washed and chopped
2 tblspns olive oil
1 1/2 pint veg stock
Add other green leaves if you like. We added 3 handfuls spinach and rocket

For lunch with warm, crusty olive bread

How to make Leek and potato soup

Heat oil in a large pan.
Add potatoes and leeks. Put lid on pan, turn the heat right down low, leave to cook for about 20 minutes until veg is softened.
Add veg stock and other leaves if using. Heat soup until it is gently bubbling.
Leave to simmer for 30 to 40 minutes.
Remove from heat and blend until smooth with a hand held blender.
Serve with bread.
