Ingredients

6 medium potatoes washed but not peeled
4000g smoked haddock
Lemon juice
Handful of cut chives
Sprinkle of frozen peas and sweetcorn
Breadcrumbs... we whizzed up some old bread
Vegetable oil

Why did Seth make this dish?

Because I dug up lots of potatoes with Grandad at the allotment

How to make our allotment fishcakes

Boil the potatoes until soft and when cook peel off the skin
Smash them with a masher... I loved this bit!
Mix in the fish cut into smallish pieces, the lemon juice, chives and veg.
Get messy with your hands and roll into balls then roll in the breadcrumbs and squash them into a patty on a baking tray covered in vegetable oil
Repeat till all mixture is used.
Bake in a preheated oven at 190c for 10 minutes. Take them out turn and bake for another 10 mins.
I served mine with tomatoes and beans from the allotment but you could also have with salad
