TOAD In THe hoLE

Matthew toad in hole

Ingredients

450 g pork sausages
25g lard
225 ml mil
100g plain flour
pinch of salt
1 egg

Why did Matthew make this dish?

How to make Toad in the hole

Prick sausages with fork. Put lard in small roasting tin, add sausages
Bake in oven at Gas Mark 7 for 10 mins
Mix milk and 50ml water in a jug. Put the flour and salt in a bowl. Make a well in the centre and break in the egg
Mix flour and egg together then add the milk and water a little at a time and beat until the mixture is smooth
Pour the batter into the tin. Bake for 30 minutes. Do not open the oven door during baking
Serve at once
