Natasha's Chicken Fajitas

John's daughter Natasha's favourite dinner is fajitas. Saturday night, Sunday night, any night. In front of Glee: eleven-year-old girl heaven.

1. Put the chicken, oregano, chilli, cumin, onion and peppers into a bowl with 2 tablespoons of the olive oil and mix well. Season with salt and pepper and set aside to marinate for as long as you can.

2. Heat the remaining tablespoon of olive oil in a saut̩ pan over a medium head and add the chicken, onion and peppers. Cook until the onions have caught some colour, the peppers are soft and the chicken is cooked through Рabout 7-10 minutes. You may need to do this in 2 batches to make sure the chicken browns up nicely.

3. Serve in a flatbread or tortilla with lettuce, if liked, and with a bowl of pepper and chilli salsa or guacamole on the side.
