Cheese and rosemary sables

Ingredients

225 g cold butter diced
250g plain flour
250 g mature cheddar
half a teasp cayenne pepper
2 teasp finely chopped fresh rosemary
1 egg yolk

How to make Cheese and rosemary sables

Grease 2 baking sheets

Pre heat oven to gas mark 4

Place the flour, butter, cheese, cayenne pepper and rosemary in a food processor. Pulse until it forms a dough

Roll out on a floured surface to 5 mm thick

Place the shapes on to the prepared baking sheets, then cover with clingfilm and chill in the fridge

Brush with beaten egg

Bake for 10 mins Gas mark 4
