How to make Tuna and veg lasagne
Place all the ingredients for the veg layer, except the chopped tomatoes in a roasting tin. Roast at 200°C, gas mark 8 for 35 mins.
While the veg is roasting make the white sauce. Put all sauce ingredients in a saucepan and heat gently, stirring all the time, until the sauce begins to bubble and thicken.
In another pan put all the tuna layer ingredients and heat until the mixture is beginning to bubble.
When the veg is roasted remove from the oven. Stir in the chopped tomatoes. Cover this layer with lasagne sheets.
Add the tune mixture on top and cover this with another layer of lasagne sheets.
Pour the white sauce on top and sprinkle with grated cheese.
Cook in oven for 30 mins at 180°C, gas mark 6, until golden and bubbling.
Serve with French bread and salad.
