|1||clove of garlic, peeled|
|2||ripe avocados, peeled and fleshed|
|1/2||lime, juice of|
|2||spring onions, finely chopped|
|1||small handful of fresh coriander, finely choped|
|1/2 - 1||green serrano or jalapeno chilli, deseeded and finely chopped (optional)|
|4||cherry tomatoes, sliced (optional)|
|sea salt, to taste|
HOW TO DO IT
- Using a big pestle and mortar or a molcajete, grind the garlic to a paste. Add the avocado and pound until mashed. Add the lime juice.
- Stir in the chopped spring onions and the chopped coriander. If using, stir in the chillies and the tomatoes. Season to taste with salt.
